Cultivated in Honduras by Silvestre Vasquez and Joel Lopez, this organic Pacavita green coffee is grown high in the Pico Congolon mountains, nestled between two biological reserves . The region's distinct rainy and dry seasons allow the coffee cherries to ripen fully before being washed and sun-dried . The result is a cup with bright acidity and notes of roasted almond, green apple, and vanilla

A light to medium roast would likely be best suited for this Washed Organic Pacavita green coffee from Honduras. You could also experiment with a slightly darker roast to bring out more of the chocolate and caramel notes, but be careful not to over-roast, as this can result in a bitter and burnt flavor.
