Cultivated in Honduras by Silvestre Vasquez and Joel Lopez, this organic Pacavita green coffee is grown high in the Pico Congolon mountains, nestled between two biological reserves . The region's distinct rainy and dry seasons allow the coffee cherries to ripen fully before being washed and sun-dried . The result is a cup with bright acidity and notes of roasted almond, green apple, and vanilla

A light to medium roast would likely be best suited for this Washed Organic Pacavita green coffee from Honduras. This roast level will highlight the coffee's natural sweetness and acidity while preserving its delicate flavor nuances. You could also experiment with a slightly darker roast to bring out more of the chocolate and caramel notes, but be careful not to over-roast, as this can result in a bitter and burnt flavor.
